had three bananas that were very ripe. Time for Banana Bread!
As usual, I trolled the internet for a good starting point. and went with this recipe because it didn’t ask for anything I didn’t already have and only needed one cup of bananas (again, all I had)
I replaced the butter with margarine (no butter in the house either!) and didn’t bother sifting the flour.
Ingredients:
1 cup sugar
1 egg
1/2 cup margarine
1 cup bananas (mashed)
2 Tbsp milk
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
Cream the eggs, sugar and butter.
Mash the bananas and milk, mix with butter/sugar/egg mixture.
Stir in the rest and pour in a loaf pan.
I baked at 350 for 80 minutes, checking in 10 min increments after one hour.
I baked it on a D&D night and it went fast, everyone seemed to like it fine.
I saw some recipes calling for sour cream, I’d like to try one of those next time.
