Apple, Carrot, Walnut Muffins

Dry Ingredients:
1/2 cup walnuts, chopped fine
2 cups flour
1 cup sugar
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ginger

Wet Ingredients
3 large eggs
2 cups carrots, shredded
1 large apple, shredded
3/4 cup vegetable oil
1 tsp vanilla extract

Method:

Preheat oven to 350 degrees.

Combine dry ingredients.

Combine wet ingredients.

Fold wet ingredients into dry just until moistened.

Bake for ~25 minutes.
