Chili!

I made a very large batch of chili:

Ingredients:

2 lbs ground beef
1 medium onion, diced
2 cans of crushed tomatoes (28oz each)
1 can tomato paste (12oz)
1 can (15oz) Dark Red Kidney Beans
1 can (15oz) Light Red Kidney Beans
1 can (15oz) Garbanzo Beans
1 can (15oz) Black Beans
1 can (15oz) Pinto Beans
1 Tbsp Brown Sugar
1 Tbsp Salt
2 tsp rosemary, ground
2 tsp cumin, ground
1 tsp coriander, ground
1 tsp thyme
1 tsp red pepper flakes
1/2 tsp black pepper, ground
3 cloves garlic, pressed

Method:

Brown ground beef, reserving drippings.
Saute chopped onion in drippings, drain.
Combine all ingredients in slow cooker and cook on low until flavors meld. (~5-6 hours minimum)

Next Time:

Add green peppers; maybe a bay leaf.

Hummus!

Made a double batch for Christmas:

2 cans garbanzo beans, drained (reserving 1/2 cup of the liquid)
2 tbsp creamy peanut butter
3 cloves garlic, pressed
1/2 tsp cumin, ground
1/2 tsp coriander, ground
1/4 tsp black pepper, ground
1 1/2 tsp kosher salt
1 tbsp lemon juice

Process in food processor until smooth.

Eat!

Non-Dairy Morsel Cookies

Basically the toll house recipe if you are familiar:

Ingredients:
1 cup shortening
3/4 cup white sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
9.9 oz whole wheat flour
1 tsp salt
1 tsp baking soda
2 cups of desired morsels.

Cream together butter, white sugar & brown sugar
Beat in vanilla and eggs.
Sift together flour, salt & baking soda.
Slowly integrate into butter mixture.
Stir in morsels.
Form into balls (~1tbsp) and bake or freeze.

Bake at 375 degrees for 10 minutes unfrozen or 12 minutes frozen.

Carrot Muffins Revisited

Second attempt at carrot muffins:

Cut oil to 1/2 cup and added 1/2 tsp ground nutmeg and 1/2 tsp ground ginger. Omitted raisins due to Ashley’s taste preference.

Meatloaf

1 green pepper, roughly chopped
1/2 onion, roughly chopped
2 lbs. 80/20 ground beef
1 egg
1 1/4 c bread crumbs
1 c soy milk

Combine all but milk in bowl.
Add milk.

Bake at 350 degrees for one hour.

Baking Hamburgers

I bought a probe thermometer a week or so ago and have been looking for a reason to use it.  I also have some leftover hamburger from the sloppy joes that needs to be used up, so I figure I’ll try baking some hamburgers.
